02 The technique
A dinner date in Amsterdam is booked by the hour like everything else on this repertoire, €180 for one guest and €360 if the two of you would rather have a pair, and it covers the whole evening rather than the meal sitting inside it. She meets you at the restaurant, or comes to the room first and walks over with you, sits down, orders, talks, and stays for as long as the booking runs. Nothing about the table is different from any other table in the city. What happens after it is between the three of you, and the evening ends where you are staying rather than where you ate.
One therapist, or two, the second pair of hands is €360 an hour for the pair, and any technique on the repertoire can be worked that way.
The restaurant is younger than most people assume. Public rooms where a stranger could sit at their own table, read a card of dishes and order one of them spread through Paris in the decades either side of the revolution, when cooks from broken-up private households went into business for themselves. Before that, eating away from home meant a fixed dish at a shared board at an hour somebody else had chosen. An evening built around a table you picked, with company you picked, at an hour that suited you, is roughly two hundred and thirty years old. Amsterdam took to the idea quickly, being a city with long evenings and narrow rooms to spend them in.
The practical part is the arrival, and it is worth getting right. Meeting inside the restaurant works best in a busy room, where a third person joining a table is nobody's business; meeting at your door works better when you would rather walk over together and have the first ten minutes of talk behind you before anyone sits down. Say which you want at the booking. She dresses for the room you have chosen and will ask what the room is, so mention whether it is cloth napkins and a tasting menu or a corner table with the windows open. Conversation is her half of the work and she does not need to be handed lines; two people who have been talking to each other for years sometimes find a third voice does more for the evening than the food does.
Book the table yourselves and send us the hour and the address, or name the hour and the part of the city and we will tell you what an evening there usually runs to in hours. Confirmation comes back on WhatsApp in about ten minutes with a name. From there the night goes as it would with any third person you had invited: she arrives on time, the two of you introduce her however you want her introduced, and nobody at the table is told anything at all. The clock starts when she arrives rather than when you sit down, so a kitchen running late does not eat the end of your evening, though an evening you suspect will run long is far easier to extend at the booking than at eleven at night. After the meal the three of you walk back to wherever you are staying, or the night ends at the restaurant door, and both of those are perfectly ordinary. Payment happens at the start, in cash in any major currency, by card, or in crypto, and the restaurant bill is a separate thing settled by you at the end like anybody else's.
An anniversary the two of you have already booked a table for and would like to make less predictable. A last night in the city with a long evening and nothing behind it. Couples who would rather start an evening dressed, in a room with other people in it, than start it in a hotel room with a knock at the door. It is also the gentlest way in for two people who have never booked anything of this kind and would like the first hour to look exactly like dinner.
An evening with a shape to it. The meal handles the introductions, the walk back handles the rest, and neither of you has to manufacture the part in between. Couples who go this route tend to say the hour at the table was what made the night feel like theirs rather than arranged, and that they stopped thinking of it as a booking somewhere around the second course. Whatever follows lands better for having had three people talking first.

You do, exactly as you would for any guest the two of you had invited. The hourly fee covers the evening and is settled at the start, in cash in any major currency, by card or in crypto; the table is billed to you at the end by the restaurant like every other table in the room. Nobody orders the most expensive thing on the card to make a point of it. If you would rather have the shape of that agreed beforehand, say so on the thread and it will be agreed.
Nothing, and nobody asks. A table for three is a table for three. If the reservation is in your name, change it to three when you make it rather than arriving with somebody extra, because that is the only version of this that ever causes a fuss, and the fuss is about chairs rather than about anything else. Waiters in this city have seen considerably stranger tables than yours and will not look up.
That is the usual shape of it. The booking is a block of hours rather than a meal with something added on, so the walk back and whatever the rest of the night turns into sit inside the same hours at the same rate. Everything else on this repertoire is available in the room at the end, a massage included, and if you already suspect you want one, say so at the booking so that oil and towels travel with her rather than only an evening bag.
Less than the two of you are picturing, largely because a restaurant does the work a hotel room would leave to you. There is a menu to argue over, a waiter interrupting, wine to pour, a room to look at. The first ten minutes are the whole of the nerves and they get spent ordering. Say at the booking that it is a first, and the name that comes back will belong to somebody who is good at precisely that hour.
